It's the time of year for salads again, and I always love them with a dressing, but the commercial ones are rather overpriced, especially the balsamic one which goes well with fish (£1.50 for just 150ml?), so I decided to do a web search for a recipe for a balsamic dressing (thinking "how hard can it be to make?"). I found a good page on Jamie Oliver's site:

And Jamie says that there are good reasons to use salad dressings, not just the obvious one of taste. 🙂

The other good news is that your body can absorb far more of the nutrients from salads because of the presence of oil and acid in the dressing. So dressings give you the double whammy of being a healthy benefit and also delicious!

Having today made my first batch of homemade balsamic dressing, and finished up the shop-bought one, I looked at the ingredients on the label. It contains brown sugar (though probably not enough to have a noticeable BG effect), which probably indicates stinting on the vinegar as balsamic vinegar is supposed to be naturally sweet. Even worse, it is mostly rapeseed oil, and has only 8% olive oil. 😱 If this is Tesco's so-called "Finest", I shudder to think what their run-of-the-mill stuff is like. 🙄

Homemade balsamic dressing, made according to Jamie Oliver's recipe, is 75% olive oil, 25% balsamic vinegar, a little salt and pepper, and nothing else. It's also a lot cheaper than the commercial version.
