So who eats root vegetables
This time of year I love them but I'm nervous coss I seem to overreact to everything at the moment. I could happily eat jacket potato or stew every day.
So are they a good balance of nutrients or to high in carbs
 
I find pickled beetroot doesn't impact my BG levels even when I just eat it on it's own straight out of the jar. I think the vinegar plays some part and considering that there is sugar in the pickling process, it is surprising but I have the pickling fluid in drinks so that it isn't wasted and that has no impact either. I really dislike the sweetness of beetroot when it isn't pickled, so I don' eat it other tan pickled, but I suspect they would raise my levels as parsnips do, so the vinegar may somehow offset the body's response to the carbs in them.
I also like thefact that I can open a jar of pickled beetroot anytime and add an extra veg and nutrients to my plate with very minimal effort. Particularly like them with ham or bacon or sausages or corned beef and sometimes with black pudding.
 
I have the principal of only having 1 carby veg at any one meal, so I may have parsnips or carrots or broad beans or peas but not all at the same time.
 
Like @rebrascora , I have Type 1 treated with insulin. Therefore, I have no reason to restrict the root veg I eat.
I am not a fan of pickling but enjoy beetroot as a dip with yoghurt, un a seeded cake and with chard in a risotto.
I eat carrots in a tagine, tarte tatin and soup.
It is a bit early for parsnips but I like them roasted or in a curried soup.
Spuds are spuds usually eaten as wedges but occasionally mashed.
And, as a veggie, one of my favourite winter meals is roasted vegetables (whatever I have in the veg box) with feta.

I am not a fan of swede or turnips and celeriac is considered to be the food of the devil in our house.
 
I love mashed swede and sweet potato. Not so keen on parsnips and they’re higher carb too. I do like celeriac though - sorry! :D
 
Swede is a swollen stem, they are a cross between a turnip and a cabbage, I think, and the leaves are edible if you grow them yourselves - they are always already cut off when shop bought, along with the lower part of the stem - for use as fodder I hope. I put swede and other stems, such as celery, into stews, or just throw in a bag of frozen mixed veges from Lidl.
Parsnips are roots - as are carrots and beetroot, and onions. I don't eat parsnips very often, but the others I listed are not too bad at all, they did not cause spikes when tested.
 
I like all root veg plus kohlrabi ( brassica family not strictly root veg though). Love roasted veg though I only have a small amount of potato and parsnip.
 
kohlrabi is a swollen stem, the leaves are edible as it is a cabbage/turnip cross - actually that is what the name translates as.
 
I love the root veg time of year. So a many hearty stews!
