Rhubarb and Strawberry crumble (with ground almonds)

Found my recipe at last! total carbs in recipe is about 150g (I make it) so just under 40g per portion if 4 eat it. However please note : there is no sugar added to the fruit because we find it isn't necessary. I suspect a lot of people would want to add a little - add it when you cook the fruit.

550g rhubarb
250g strawberries
(optional orange zest or ground Ginger to taste - not both!)

Cook chopped rhubarb about 20 mins, add strawberries and cook another 5 mins.
85g plain wholemeal flour (or mixture of w/m and White)
50g fat (butter really but whatever you prefer)
25g ground almonds
50g of a brown sugar (not granulated)

Rub butter into flour to resemble breadcrumbs, stir the almonds through and the sugar.

Put fruit in whatever dish you have that fits it in a thickish layer - spread crumble over top in a thinish layer.

I cook this in my fan oven uncovered at 180 for about 20 minutes - check after 15. Ordinary ovens would be 200 degrees I guess.

Please note I have not made this with the almonds despite what the recipe states - added extra flour. This is because K does not like nuts and she was watching🙄. Will try it next time as I don't think she will notice!

Also this could be made with some oats in the topping - or Alpen - but I haven't done this yet with the Rhubarb/strawberry combo.
 
LOL - ground almonds doesn't taste of nuts!! if it did, explain Marzipan .... which I hate although I love almonds, roasted and salted, in the shell (well out of the shell of course) covered in yoghurt, covered in chocolate, flaked, nibbed - you name it.

Ground almonds in a recipe tastes of all the other ingredients, not itself. Nice cheese scone recipe in other 'DS' forum Patti's put up in the last couple of days!

Mind you my nephew decided he didn't like eggs when he was about 8. My sister said For God's sake don't tell him there are eggs in cake, he already refuses to eat too many things!

He did grow out of it .....
 
I love marzipan and could hardly believe it when I was told it is made out of nuts! I actually used to buy slabs of it to eat! 😱 Probably wouldn't get away with that now...

I also love crumble and this sounds gorgeous so might just have to give it a try! Thanks for the recipe 🙂
 
Trophy - K has eaten ground almonds on numerous occasions without knowing It was there and of course she didn't notice! But she was watching, well helping, when I made this one so couldn't get away with it🙄

We make Christmas pud together every year but I put the ground almonds into the flour before we start and don't tell her😉

Hope you all do like the recipe - we all think Rhubarb and Strawberry go really well but please taste before making up into crumble - the original recipe I adapted it from had quite a lot of sugar in.😱 Could use sweetener of course but I'd rather not.
