anyone got a recipe for this as I have a large bag of red onions to use up or any other ideas please

Hi Gail, Never tried it, but most of my soups tend to be jsut chucked in with stock, garlic and onions, so maybe just the onions with some stock and seasoning would work??

I would saute the onions first though to soften.

Let me know if you try it and it works.🙂

Yes thats probably best Gail - I wasn't sure if you wanted a quick answer to cook tonight maybe so thought I would say what I would try.

Hope it turns out nice anyway however you manage to make it Gail - sounds yummy with the cold weather.🙂
 
I'd soften the onions and a clove of crushed garlic in a little olive oil first, being careful not to brown them. Then put them in a pan with some stock and simmer for around 20 minutes. Serve with some fresh chopped parsley and a drizzle of creme fresh or some grated cheddar.

Or, if you have time, roast the onions in the oven instead of softening them. Coat them in olive oil and put them in a roasting dish, maybe with some fresh herbs and roast them for about 30 minutes before putting them into the stock as above.

cooked onions in oven with garlic and some fresh herbs it smells rather divine. Now finishing off in slow cooker yummy
 
Today I made soup with some shallots (which are quite red) so will probably work with red or normal onions. I've put the recipe in with my other soup recipes.

I usually use red onions in roasted ratatouille,
red curry with beef, red onions, red peppers, tomatoes (Thai or Indian)
chopped finely in a mixed bean salad.
roast some with the meat when making a roast
They are lovely in a red onion quiche (but only if you can eat the pastry)
I use them when making red pesto pasta (if I have any) with bacon and tomato

As you can see if I'm making a 'red' meal; usually something with tomatoes I'll use red onions but only if I have any.
I tend to make a lot more tomato based meals these days as they have far less carbs and cals than cream.
 
I have used up some mushrooms this week too Gail. Took about 10 mins.

All I did was added some olive oil to mushrooms to soften, then added some garlic granules and thyme. When soft added some chicken stock, boiled, then blitzed with the blender and added 2 tbsp cream. Absolutely delicious and will make again with this weeks leftover mushrooms. Might make a vegetable one too so I eat more veg!
