Relationship to Diabetes
hi.i am new to diabetes and i am fortunate not too have it,have recently found the need to bake some sweets for diabetics ( and i am suprised how little i know) would be gratefull of any help in getting seriously better results..have used quark, fromage frais, natural yoghurts as cream/butter substitutes. gonna try the choc cake made with beetroot soon, anyone been there done that ???!. could anyone recommend a book that is tried and tested, thanks

Hello chefpaul, welcome. It's good that you're taking an interes - there are too few out there who bother.

Basically, it all comes down to carbohydrates. That makes cakes and most other puddings a bit of a problem. Coincidentally, I have just made up a couple of sweet egg-based dishes. Have a look in the Recipes thread and enjoy!

Watch out for some artificial sweeteners - they are laxatives!

Since mostly the issue is total carbohydrates, generally I find portion size is important - this summer I was sharing my little boy's ice lollies because the child size ones were generally less than 10g Carb per portion and my body can cope with that (especially when I've been out playing with the little one).

just had a quick peep seem really helpfull sites SAT eve now so gonna have a look nxt week when i av a little more time.seems at the mo though that some matrons seem to think sugar is the only problem an dont really want to construct new ideas/recipes ,but am gonna persevere and see where i get !!! 😉

Oh hell Paul - you may get into trouble with the Food Police if you start serving up low carb, full fat stuff ! 😉 Do take care which recipes you choose because most of them aren't intended for people who sing from the EatWell Plate Hymnsheet. Just low carb.

If Matron thinks it's only about sugar, then she has an awful lot to learn about nutrition, doesn't she?

What about Fructose, Lactose, Maltose, Dextrose - does she think they're alright?

You'd be surprised the number of people who think eating dried fruit is what we used to call a 'free' food too .... about the only 'free' foods have so much water in them they don't actually provide us with anything worthwhile - eg I give you The Lettuce. LOL

Here's a suggestion Paul - try to get hold of some Slimming World pudding recipe books second-hand on Ebay or Amazon (you can only buy them new if you're a member). With SW, most high-carb ingredients are strictly restricted (e.g. flour, sugar, cooked/dried fruit) so the majority of the recipes are diabetes-friendly and very low fat.

many use almond flour instead of ordinary ....also if you use chocolate choose the darkest dairy free ..and use in moderation
