I also use riced cauliflower with a chilli, and if we have a chasseur or strogonoff, and my readings at the 2-hour mark are always well in range. It's a massive carb saving over rice. I buy the FullGreen one, having failed miserably to make my own from scratch.
 
Yep, I've used cauli rice a few times now, quite like it, yours looks tasty... 😎

I have a Bosch chopper which is excellent for doing cauliflower rice or indeed any veg which need chopping or making tuna or mackerel pate. They are only about £25 and don't take up much room on the work top.
