Why aren't there any recipes for one on Diabetes UK. My family are not diabetic, only me, and making a meal for 6, 4 or 2 and having to freeze the "leftovers" is taking up too much freezer space. Or, have I missed something that will help me do meals for one??? Many thanks. Jean Type 2 on Insulin
Is there my reason why the rest of your family cannot eat your diabetes friendly meals? It seems extra hard work cooking separately for them and for you. My part is happy to try new food regardless whether it is supposed to be healthy or it.

Hi, I eat whatever I'm cooking for the family except I don't have the carby bits. So instead of eating potatoes, rice or pasta, I do myself a big pile of green veg. It was a bit weird to start with, eating chilli and curry with broccoli and beans but I wouldn't have it any other way now.
I do the same as @Vonny above. Try to cook the same meals but have less of the carbs. Does mean we eat fewer risotto, paella, pasta based dishes but saves having to make 2 dinners. Also eat more veg which is healthier.
Many thanks all, I should have said, my family is the 2 of us and my husband says he's more than happy to eat the same as me, I'll just have to cut down on the ingredients with a meal for 6.
I think you've used your email as your user name? You may want to delete your account with that name and set up a new one with a different user name? (NB not 100% sure if this is the reason it's showing, but it seems likely)
If you try something like the site Ditch the Carbs, you can adjust the amount for however many people/portions etc - it is American, but some very good recipes.
