Can anyone recommend a quick meal (chuck in the oven type) from Tesco or Co op that won't do too much harm. Only just been diagnosed T2 so still trying to work diet out.

I rarely eat pre-prepared meals so can't really advise on them. How about having a stir fry instead? You can get prepared stir fry veg and bean sprouts and some chicken - cut the chicken into thin slices and Bob's your uncle 🙂 Quicker than an oven meal and better for you!

It's a good idea to plan ahead an cook your own meals. I have a few standards - chicken curry, sweet and sour, chili con carne, spag bol etc. Cook up a big panful and then freeze off portions so that you can just nuke them in the microwave later. Much cheaper than buying supermarket meals and you know exactly what goes into them 🙂

Vesta "Paella" in a box with carbs printed on. I add lots of frozen fish & seafood. Less than a ?1 plus fish not partculary quick but tastes & smells GOOD 😎

What Northerner says really🙂

BUT - my Mum has quite a few of those meals as she hasnever liked to cook and now she is on her own even less so. They have a 'traffic light' system on them so look out for ones that have no 'red' lights and as few 'amber' as possible. Some of the fish based ones are OK - if you have a microwave you will have a bit more choice as you can get some 'meals in a bag' that are really quick and perhaps not as high in fat or salt. My Mum always adds extra veg (again the ready prepared stuff you just cook in it's bag) or ready prepared salad.

Or Mum has a poached egg some tomatoes and toast, then some strawberries or other fruit and plain yoghurt. She isn't D but after loosing my Dad tries to follow a healthier diet.

(Those stir fries are 'yum' Northerner -wish I could get K to like them - she doesn't like bean sprouts and it's not the same without them:( )

Thanks all. I do normally cook but every now & then I have to nip out quickly. In the past I've always skipped a meal & just grabbed something (normally unhealthy) when I get home but having to change that now🙄

Really quick meal:

Some rice noodles let sit in boiling water for 4 mins, drain, stir in a couple of teaspoons of basil pesto and sprinkle with freshly grated parmasen cheese.

Tasty and filling.

I like Tesco veggie moussaka when I'm in on my own. Total carbs 35g but a lot of that is from lentils.

What about a nice quick salad today - seeing as Summer has arrived?🙂
