Quick low carb pudding for stodge lovers

I was hungry when I got back from walking the dog so I made this.

2 tablespoons almond flour
1 tablespoon coconut flour (or another two tbsp almond flour if you don't have coconut)
1 tablespoon granulated sweetener, I used erythritol (I will use a bit less next time)
1/4 teaspoon baking powder.
Mix all these together in a bowl.

1 large egg
1 teaspoon vanilla extract
1 tablespoon melted butter
Mix all these together and then add it to the dry ingredients and mix well

Put into a mug or ramekin and cook for about 90 seconds in the microwave.

Turn out into a bowl or just eat it out of the mug. I had mine in a bowl with some cream poured over. It tasted just like a steamed sponge.
 
Yes, I have made the low carb microwave mug cakes before. I always make chocolate ones by adding some cocoa and a dollop of peanut butter into the middle of the batter just before putting the mug in the microwave, so it has a melting peanut butter centre. I usually include some psyllium husk and or chia seeds to add extra fibre and leave out some of the coconut flour.

I've never really been a pudding person although I do like ice cream. But tonight I was cold and hungry after our walk and this little sponge just hit the spot!

I thought I'd try this in the spirit of experimentation - I used a half teaspoon of sweetener, added cinnamon and ginger to the mix - really nice.
I have a load of coconut flour, lots of little bags of ground almonds, all kept in the freezer so it stays fresh - I'll be trying other additions for sure.

I guess you could put a few blueberries or raspberries in, or some desiccated coconut, as well as the chocolate and peanut butter variants that Barbara mentioned.
Lemon would be nice as well.

I suspect that berries would make it a bit soggy - though it would be OK to add them with the cream.
