This is my favourite go-to dinner, ready in minutes, and super tasty!!
Take a nice piece of Scottish salmon, and place skin down on a baking tray. Coat the top of the salmon with a layer of scrummy mustard. Whizz up a handful of pistachio nuts in a blender until they're fairly broken up, and place them all over the mustard. Cover with tin foil and bake in the oven at around 180, for 15 mins. Serve on a bed of baby spinach with a drizzling of balsamic glaze. YUM. Glass of wine optional 😉
