I really have trouble bothering to spend a lot of time cooking for just me. Rather than reach for a ready meal, I made up this recipe last night and really enjoyed it!

Heat up a small pan and spray with Fry Light. Gently saute some diced lean chicken (skin and fat removed) with a shallot or small onion and some sliced mushrooms. Stir in a sachet of Heinz Squeeze Mushroom and Parsley instant soup (92 calories or 4.5 syns on Slimming World) and enough boiling water to give the right sauce consistency. Serve with a jacket potato or rice/pasta and a green salad or whatever veg you like.
 
instead of the Heinz instant soup, have you tried miso soup (Sainsbury's sell it) and a packet of Udon Noodles (not the dried ones) just chucked in the pan with a bit of water for a couple of minutes.

You can also add the campbells mushroom condensed soup too!
 
I follow slimming world and that sounds very nice LeeLee, I am sometimes at a loss on what to cook for meals.
