I have learnt so much from the kind and supportive advice given on these forums, and the site in general. I understand about the 4-7 mmol readings before meals, and not more than 2 more after 2 hrs but does it matter how fast the levels drop? And is this related at all to high and low GI food advice? Or ultimately is it just best to focus on as low carb as possible (I'm also low fat) and portion control?

Whether a food is high or low GI is very individual as it depends on people gut microflora and metabolism and also what a food is eaten in combination with so all the data on whether a food is low or high is from lab testing not a real person.
You are right the guidance is to aim at 4-7mmol/l before meals and once levels are lowered by diet and or medication then the aim is to be no more than 8-8.5mmol/l after 2 hours. The suggestion of no more than a 2-3 mmol/l increase is if people are starting with high readings then the 8.5 is not achievable initially.
It is better to focus on low carb if that is the approach you are taking, there is no need for low fat unless you need to for other medical reasons.
 
Thank you! The low fat diet is due to a gall bladder issue. I just need to disregard past, non diabetes related, nutrition advice and stick with all you good people on here!
