Preserving Apples

Any suggestions?

Have an abundance of apples this year, would really love to preserve some for winter so looking for ways to preserve them that leans more toward diabetic friendly (not dehydration) any suggestions?

Have one large kilner jar to fill 2ltr

It depends what you want to do with them.
I keep mine for months in the fridge.
Ideally remove any bruised ones, (like the one in the photo) wrap in paper, and store in a cool dark place.
Bruised ones I made into wine last year, or chopped and froze for apple crumble, apple sauce, anything where a mushy apple would work.

If you're planning to use slowly then multiple small jars are probably better for preserving than one large jar, especially if you're not adding sugar (sugar is a preservative). That makes it easier to use up each jar before it starts to spoil.

I would suggest some savoury apple sauce (I like making it with cider as the liquid to boil the apples down), and maybe some apple chutney (obviously reduce sugar from most recipes).
 
I often freeze lightly stewed apples. I don't add any sugar (if needed) until they are defrosted.
When defrosted, I include them in crumbles (you can make a lower carb crumble with a nutty top) or make them into apple sauce for sarnies or roasts.

Or you could make them into cider and, if that doesn't work out great, convert it into ACV.
