I had lunch at a friend's house yesterday and enjoyed freshly-made wholemeal bread courtesy of her breadmaker. It was delicious and my BG meter barely noticed it - which is pretty much in line with my growing belief that UPF is not only responsible for so much unwanted weight gain in many people, but also (to a degree) a diagnosis of T2. Personal experiments continue and my next blood test results will be interesting - to me, at least.

Moving on to the main reason for this post, I've now discovered on the Panasonic site a recipe for low carb bread and would be interested know if others have tried it and if so, their opinions. Anyone?
 
I tried some low carb rolls (keto) using almond flour, they were actually good but much more like a scone as slightly sweet.
I thought that if I made them again I would add some savoury ingredients like olives, sundried tomatoes or cheese.
My note says 'needs work'
 
I found that the breadmaker I got knocked all the puff out of the breads I made low carb enough for me to cope with, so I got a mixer and used that instead, making the dough in the mixer and allowing it to rise just once resulted in a loaf the size it should be rather than a doorstop. The inside was more open than usual, but not bad. If kneaded a second time the inside was more normal, but not so light.
 
Would be interested in the recipe for low carb bread made with almond flour as really miss my crusty bread. I do try making scones and sponge with almond flour. Not as nice as my usual baking using Self Raising flour but surprising how you adapt when you know it’s better for you.
Any recipes would be appreciated using almond flour . Thanks in advance.

The recipes on sugarfreelondoner use almond flour in their low carb cakes, biscuits etc.
 
Totally off subject (well, a slight tenuous link), my poor bread maker and toaster have become kitchen relics since my T2 diagnosis. I never found a bread that didn’t rocket my BG so I just gave up eating it.

Can I just ask UPF?? I love the challenge of an acronym but can’t fathom this one :confused:

I tend to agree on you on this. I moved to cooking everything from scratch, it takes time but it's two of us taking turn. Together with reducing carbs and upping exercise my BG is now very close to remission. And I too have a Panasonic bread machine, and love bread, so I'm going to look for that recipe!
