My all-time favourite Thai dish - translates as 'stir-fried basil'. A very, very, very simple dish (it's just fried mince with a bit of seasoning) but it packs a real flavour punch. Don't be frightened by the amount of chilis - I don't know whether it's the ones I used but even with this many, the dish was quite mild for my palate. Whenever I'm in Thailand I live off this stuff - it's always really cheap but you will always get a really good meal.
You will need:
Wok
500g minced chicken, turkey, pork or beef (or whatever, really, Make it with Quorn if you want)
10 birds-eye/Thai chilis, chopped really small
Soy sauce
Fish sauce
Cooking oil
3 garlic cloves diced
A good big handful of FRESH basil leaves - Holy or Thai basil works best if you can find it but to be honest it works just fine with sweet basil
Add a little cooking oil to the wok and get it really hot (I prefer using toasted sesame oil but anything will do).
Chuck in the garlic and slosh it around.
Throw in the mince and stir-fry until it's about halfway cooked. Add the chilis plus a teaspoon of soy sauce.
Keep stirring it round for a bit - the mince is almost cooked. Add two tablespoons of fish sauce and keep stir-frying
Then chuck in the basil leaves. They'll start out big but they'll shrink down by loads, very quickly. This is what they're supposed to do. Your kitchen will also start to smell amazing.
Stir-fry for about 30 seconds after adding the basil and then plate up. This tends to work extremely well with rice (so feel free to use your own cauli-based alternative!). You can also just serve up on its own anyway.
This is also a really good way of using up left over roast dinner meat instead of just chucking it in a curry - just chop up your meat and warm it up in the pan, it doesn't really matter if it's minced.
