I'm going back to Uni soon and moving into a house so I will no longer be on campus! This calls for packed lunches except I don't eat sandwiches and i'm not much a fan of rolls either! I'm also coeliac so can't have wheat and that.

What kinds of things could I create for my lunches when I need to? Inspiration please guys!!!!
 
Could you make soups and take them in a thermos flask? Nice and filling and warming on chilly Autumn days. You could vary it a bit with different veggies etc.. You could make spicy ones in the real Winter!
 
I take a packed lunch to work. It normally consists of chopped pepper, cherry tomatoes, a couple of chunks of different cheese and a portion of ham or salami. Tescos are doing a 3 for ?2.00 deal on individual serrano ham and salami at the moment. I also include some nuts and seeds as snacks.

Another Coeliac, now I don't feel so alone!

A handful of Rice noodles, left to steep in boiling water for 4mins, drain an stir in some pesto, add a little grated parmesan.
Hot & filling.

Do you eat wraps?
GF wraps are simple to make, filled with lettuce, mayo, chicken and bacon.

Hi Look at the 5 bean hot pot recipe - if you make up the bean base you can do anything with it--- thicken with cornflour or SMASH. I tend to use SMASH when i do not have much time as i can add it in snmall quantities and it does not go lumpy
dilute it a bit by adding extra canned chopped tomatoes (or get chopped) and you get a soup soup
add chilli to it
add bacon to it
add sausage to it
beef mince
all will go in a soup flask

Salad Options

Hi

You can make a salad from almost anything.
Get a pack of mixed salad leaves, add some of the following -- tomato- onion - cucumber - carrot - pepper - mushrooms - dressings bacon - chicken - turkey- you can make up 3 o 4 days at a time and keep them in a fridge - LIDL do a potato salad with fromage fraise which is very nice - add rice cake and pate, cream cheese -

boiled rice add mixed vegetables only keep for a couple of days -
pasta various sauces-
cous cous various sauces just thought you will not be able to use main stream cous cous but someone else may know a good substitute.

I tend to get a pack of mixed leaves ---- as I waste to much if I buy individual items (lettuce - spinach - rocket) however hard I try I never seem to manage to eat a whole basket full in a week.

We have a Farmfoods shop near us (a bit like iceland) they seem to do all sorts of frozen mixed veg for about ?1.00 a bag

No Idea which uni you are going to. but if there is a market near by you should try and get there about 1/2 hour befor they pack up you can get some good prices on things at the end of the day. and a good walk around it!

How about lentil or chickpea dahl with grilled chicken or lamb? That would go in the soup flask with no problem and be really filling.

David thanks so much for linking me to the wrap recipe! I've never found a decent recipe to follow and it looks easy enough.
