Orange and Cranberry Muffins

This week's bake, I just used a muffin recipe from Sugarfreelondoners website and swapped the flavour to a zest of an orange , the juice of the orange and 50g of freeze dried sugar free cranberries that I had in the cupboard

I have recently started using freeze dried berries in my cooking.
I haven't tried cranberries but the strawberries, sour cherries and raspberries have a really really intense flavour that works very well in muffins.
I make up a batch every now and then and freeze them for when I fancy. A blast in the microwave and I can have a muffin treat with my afternoon cuppa.
Or occasionally breakfast because they are not as sweet as normal dried fruit.

I currently have a choice of sour cherry with pecan or raspberry with almonds (they have a bit of a "Bakewell vibe" to them) or some spicy apple ones made with fresh apples I kept forgetting to eat.
 
I bet they taste as good as they look as do all of your offerings, just bookmarked Sugerfreelondoners.
