Hello!

What meat can I accompany with feta cheese, vinegar olives, plum tomatoes?
Luncheon meat is one great option, but I need some variety? Any other tasty ready to eat meat?
Another is frankfurters.

Also, how can I take these with me at work? Do I need to refrigerate them?

Last, is there any other low carb options that I could add?

thanks!

I take a salad (lettuce,Tom's, cucumber) in a small lunch box with a click close lid. I have a little pot that holds dressing that sits inside the container. Alongside the base salad I mix it with a feta cheese/black olive combo or chunks of baby mozzarella cheese or cheddar/ham combo . Sometimes I buy a pack of chicken thighs/ breasts, season them and roast in the oven for the lunch box for the following day. Other times I might take some crustless quiche, fritatta or strips of cooked bacon with my salad.

My lunch then goes in a little square lunch bag and I wrap a freezer block/ gel ice pack in a plastic bag to sit at the bottom of the bag. This seems to keep my lunch cold until my lunch time which is about 5 hours later.
The trick to this is remembering to put the ice pack back in the freezer when you get home that night so it is frozen again for the morning!

Mmmmm...I'd have some plain old boiled ham with that Feta to balance the cheese's saltiness. Yum!😛

Salami, chorizo or a small tin of fish like mackerel or anchovies in oil
