Hi everyone - sorry if its an obvious answer but I'm starting to carb count as best I can and adjust my insulin. When counting carbs from the info on food labels. Do you take the full carbohydrate number or only the part that says "of which sugars" ?

The full carbohydrate amount - as long as it is using the UK system of not including the fibre.
Sometimes there is confusion particularly with online information as in the USA they spell it fiber and include it in the carb count.
There might be other things you ned to count in as an insulin user, but those are the carb counting methods.
 
Total carbs, as they will all make your blood sugar rise. “Of which sugars” is pretty useless information, but try telling the food industry that! They seem to have got it into their heads that sugar is bad for you but that other carbs somehow are not, when it’s all basically made of the same stuff.
 
Take care with the Total carbs if you are in USA.
Fiber is a type of carbohydrate. However, we do not digest it.
In UK food labelling, Total carbs excludes fibre. Therefore, we can take the Total carbs directly for carb counting and insulin adjustment.
In USA. Total carbs includes fiber. Therefore, this will need to be deducted.

For this reason, if you are checking carbs from a website, you need to check the source of the data.
