Oat and raisin cookies - just baked!

Hiya, just made these (taking them into work tomorrow to celebrate Friday!) and thought I'd share:

1 cup butter at room temp (I used Bertolli, slightly healthier!)
5tbsp fructose
1 cup plain flour
1/4 tsp nutmeg
1tsp bicarbonate of soda
2tsp vanilla extract
2 cups oats
Small handful raisins

Cream the butter and fructose until light and fluffy. Gradually add the flour, bicarb and nutmeg and mix. Add the vanilla, oats and raisins to make a thick dough.

Divide the dough in half, and roll each half up in waxed paper into a log. Put in the fridge for 6 hours (except I was impatient so used the freezer for half an hour).

Then slice into half-inch thick rounds, place ona tray at bake at 180 C or gas 4 for 15-20 mins until medium brown.

Enjoy with a glass of milk!

It's meant to make 36, with 10g carbs per cookie

Sounds lovely. As hubby has a dairy intoleerance we can't use butter so we always use margarine.
 
Sounds delicious (and im sure much better than the supermarket ones!)...I will try this weekend - thanks! x
