I've just had the car converted to work with hand controls as my feet don't feel the pedals anymore. After a couple of lessons and some practice I have to say that they are a very acceptable way of driving the car. Probably a DVLA assessment on the way but no worries about that.
 
Good to read this - somehow missed it when you first posted. After my amputation I got an 18-month licence back. It expired around the time I had revision surgery and now I have problems with my remaining foot/leg (separate thread) I imagine if they renew my licence it will be for hand controls. Bring (hopefully temporary) s retired biker I cannot see any issue with hand controls.

Have you had an assessment @berryr99 ?

I had already had an assessment when I was developing neuropathy. This was about 3 months before I got to the hand controls installation stage. After then I filled out a DVLA form to inform that I needed to drive an adapted vehicle. There has been no subsequent assessment and my licence now states that I must drive an adapted car that has automatic transmission. After some slight issues on gaining confidence to drive with hand controls I am now absolutely fine with them.
