2 weeks on from being told I'm diabetic - Type not quite decided. Im due to stay in an old gyspy caravan for 3 nights. Unlike the one Ive stayed in before it only has 2 rings, no oven !! We think we may have to eat out twice.
Can you suggest whether any of these are possibles . NOTE. I am 81/2 stone so fats aren't an issue for a few days and can have 90 - 120 carbs a day.........
Small plate fish & chips (swop chips for salad) and( remove some batter)
Ham Egg chips (swop with salad)
Caesar Salad
Steak Ale pie ( only eat 1/2 pie)
Sunday Roast
I can manage breakfasts and picnics , its the main meals that are a struggle on 2 rings . 🙂

If you are eating in restaurant then steak and salad, hunters chicken, salmon or gammon. You could ask for coleslaw rather than chips.
 
A main meal on two rings - for the first one I'd make a curry and freeze it, take fresh veges and cook them on one ring, as you say 'we' you might need to cook something with carbs for others on the other ring, which you then keep warm on top of the veges as you warm up the defrosted curry on the other ring. If you don't like curry then a casserole maybe?

It is going to be anything with potatoes, chips, rice or pasta as the portions will probably be too large or things with sauces as they can be too carby. There is always the temptation to eat everything on the plate even though you really have had enough especially if you have been used to having smaller meals at home.
Even with a 2 ring cooker you could make a stirfry if you have a Wok but enjoy meals out for a change.
 
I used a two ring induction cooker that plugged into a standard socket for a week while our new kitchen was being installed. Never ate out. With a £5 Flat bottomed Wok, you can cook anything - stir fries, soups, omelettes. With a steamer that can go in the wok you open another type of meal you can create. And never switch on the other ring. The Chinese have been doing that for centuries.
 
Sounds encouraging Mikey . Thanks. Eggs are going with us as are Heck sausages and chicken burgers. We've got brown rice noodles too. As its holiday we will eat out once The Barge Inn Melkesham , has a suitable menu with swops . All solved.
 
Hi Returned from our weekend away . Thanks for the tips . All seems to have been ok . Levels are still dropping . In the end we ate out twice , had several picnics and had 2 full breakfasts @ a lovely nearby cafe. Swops allowed.
