Hiya
I was just diagnosed with type 2 this afternoon but it's not too much of a shock as I was borderline last summer.
I've been reading as much as I can but am really confused about how to proceed. I need to lose weight and it seems like I need to cut out or reduce carbs but with coeliac disease I have to be careful with alternative foods as potatoes/rice and gf pasta have been a big part of my diet since being diagnosed with coeliac!
I am overweight but I am just not sure where to start and what to buy when I go shopping tomorrow ‍♀️
 
Are there low carb veges such as cauliflower or celeriac you could mash as a potato substitute?
 
Cauliflower is my best swap, I don’t miss rice, pasta or potatoes at all now, cauliflower is SO versatile, can be mashed with butter and a little mustard, or cauliflower rice makes a great alternative. I sometimes use mashed swede or butternut squash if I’ve had a really low carb week.
 
I would have thought that being coeliac and diabetic will probably both work well with a low carb diet. Avoiding grains is one of the strategies of going low carb. You will also need to reduce your potato consumption, but once you realise all the good things you can eat, it is not really a problem. Plenty of green leafy veg like cabbage, kale and spinach all of which can be made a lot tastier with the addition of a knob of butter or cream cheese and salad leaves. As other have said, cauliflower works well mashed instead of potatoes or riced or finely chopped sd s couscous substitute and of course it makes a filling side dish as cauliflower cheese.... made by steaming or boiling and then coating in cream cheese and grated cheese and them browned off in the over or under the grill.... instead of making a cheese sauce with flour and milk. This works well with good quality high meat sausages, or ham/gammon.
Mushrooms and Mediterranean veg like aubergines, courgettes, peppers and tomatoes are all good and a lovely tasty ratatouille made with them and onions and garlic creates a nice accompaniment to steak, burgers or chicken. Omelettes are usually a good food for diabetics. I have a 2 egg mushroom, onion, courgette, pepper and cheese omelette with a huge side salad including cherry tomatoes, avocado and salad leaves and |I don't need much else for the rest of the day.
Hope that gives you a few ideas for meals.

You really need to lose the potatoes and other high carbohydrate foods if you can, replace them with a Mediteranean stlye diet, just without the Pasta and dough! Also do not believe all you are told about low fat diet being good for you, they lied! Check out a Keto diet for instance, though it takes a strong will I suspect, well, stronger than mine! 🙄
