I am currently on week 3.5 of the Newcastle Diet. I would love veg inspiration please.

Sorry to see you haven't had any replies so far.
I see that you are using the Exante shakes which may be confusing people as to what they can recommend for veg. My first thought was cauliflower cheese because that is a favourite on the forum but with the Newcastle being very low calorie I imagine that is out. Perhaps ratatouille with just a tiny amount of olive oil might be OK. I love raratouille and have it almost every week often with halloumi, gruyere or mozzarella and loads of olive oil but I am following a low carb higher fat way of eating so the cheese and olive oil are an integral part of it being tasty and fulfilling my diet. Really struggling to think of anything low calorie veggie wise that would tempt me.
Could you give us an idea of how many calories you would be wanting to "spend" on a veggie dish?

Pickles are probably good.... Pickled gherkins and maybe a little beetroot and pickled cabbage. I often enjoy a few pickled gherkins out of the jar but then I tend to graze rather than eat set meals. Kimchi and sauerkraut are both really healthy and tasty. I have been alternating between a jar of one and then the other each week and just dip into them for a few forkfuls each day. Gives me a dose of heathy microbes as well as my taste buds a zing! 😳
 
I also eat lots of olives but again I am guessing that they are more calories than you would want to throw at them, especially if you have them with Feta or sundried tomatoes.
