So my diet is going to have to change quite a lot, I love salad and veg to be fair but I hate cooking. Any easy recipes recommendations?

Welcome to the forum
There is a food forum (listed at the top under forums) with recipes and a thread What did you eat Yesterday to give you ideas.
But an google search for low carb or keto recipes will yield loads of choices from basic to complex.

I have salad with meat or fish or boiled eggs for lunch 5 days per week. I dress it with balsamic vinegar, olive oil and seeds. Before I went to 2 meals per day, my breakfast was always eggs (boiled, poached, fried, scrambled or an omelette).
I have never used a low carb/keto recipe, I just avoid those foods that me BG meter tells me spike my Blood Glucose too much. So I stick to simple food chosen from meats, fish, eggs, cheese, full fat greek style yogurt, nuts, berries, avocados and low carb veg like broccoli and cauliflower.

Can you drink alcohol? like gin and low calorie tonic?
Yes as that is pretty well zero carbs, but overdoing it is still not a good idea as alcohol affects how your body metabolises glucose. I don't know about the flavoured gins they may have carbs so better to check the bottle or internet.
Red wine and dry wines are Ok but liqueurs and fortified drinks are much higher as is beer and cider.
Make sure you are looking at the carbs for your drinks not necessarily calories. Fevertree although nice tonic is not particularly low carb.

I eat roast chicken thighs or breasts with veg and sometimes with Konjak rice or pasta, Salmon steaks with veg, steak steak with veg, Salads, cheese, eggs many ways and sometimes I just eat Exante shakes. I am on 800 cals a day to lose two stone/20kg. I have lost 10kg on this and brought me Hba1c down. I can't face the metformins but will try again next week. Ive experimented with home made curried chicken low carb with cauli rice and that's excellent.
