I’m Steve,

I’ve been type 2 since about 2010 and lost 22 kgs in that time. This week I have started Insulin, once at night, BS is starting to go down.

potatoes and bread are probably my biggest problem, I’m trying cauliflower rice tonight ! My youngest daughter is a vegan and has some good ideas.

during the cv-19 shutdown I’m exercising much more and have racked up 205 miles in April on my bicycle.

looking for hints and tips along the way

Inka, I’m deeply distrustful of some vegan dishes, but I like cauliflower and read an article yesterday about someone who loves rice, as I do, was persuaded to try it and regretted not trying it sooner.
 
I’m not keen on some of the vegan substitutes, but I’ve found others have drastically improved eg vegan cheese. I’m not vegan but I do eat some vegan meals.

I find the cauliflower rice is good with something ‘wet’ like a curry. It’s not got much taste on its own but is ideal for eating with curries, chillies - anything like that where you want a side dish but need it to be low carb. If you like cauliflower, you’ll be fine, I’d think.

Well done on your weight loss, that is a big achievement.
I'm sure you will see an improvement in blood sugar levels if you reduce your carbs - bread, potatoes, pasta and rice are all high carb items that I try to avoid.
Cauliflower is also quite good as 'mash' and I like to add white pepper, and sometimes mustard or garlic to give some flavour.
Celeriac is also a useful substitute, again it can be used as mash or chopped up like chips and roasted, I add a sprinkle of paprika.
Food/carb queries + recipes has quite a few ideas and suggestions of recipes and swaps

Several people have commented that the lockdown has done wonders for their diabetes management, while others have found its made things much harder!

Just goes to show how different we all are.
