You have done amazingly well to bring down your blood glucose despite your implied not knowing what to do as far a eating. The thing now is to maintain that achievement and the important thing is to understand what foods somebody with Type 2 diabetes can safely eat.

I do eat pasta, bread and the vegetables grown underground ( I’d rather die than give those up) but in moderation and wholemeal . I just try to be sensible and eat well and at the right times. I truly believe that the reason for my diagnosis was eating badly at the wrong times. I do have to work 7 days a week and I do not have any time to batch cook anything.. so I’m just being disciplined in that I tell my bosses I am stopping for something to eat and drink . It seems to be working and hopefully I can maintain this .

Trying a few substitutes for the high carb things you mention, squash, swede or celeriac instead of potatoes and black bean or edamame bean pasta as they are lower carb, more sauce and less pasta.
Any way you seem to be doing well with what you have been doing.
