Hello. I am wondering if anyone can pass on any advice of what to have for a packed lunch. I do shift work (12 hrs) per shift, and need to take pack lunches. I usually take sandwiches and naughty things like crisps etc for convenience as I don't have too long to eat. Does anyone have any healthier and far more interesting ideas of what I may do. I am not the greatest of cooks, but will give most things a try. I like chicken and fish, but don't like boiled eggs!
 
When I was working I used to make bulk Mackerel sandwiches and store them in the freezer to take one out each day or whenever. Cheese is always good either as a lump or in sandwich. Stating the obvious, keep the slices thin and use good, seeded wholemeal bread. Have an apple or pear as well?
 
I'm working from home, and was when I was diagnosed back in April, which was a Good Thing because I didn't have to rely on sandwiches which were my staple fare for breakfast and lunch for decades. When I go back I'll be making up a salad the night before, usually with chilli smoked salmon, not cheap, but tasty and filling. Alternatively I'll be taking nuts and cheese (weighed out so I don't overdo it!), and a few berries for pudding. Also my homemade "super" soup, made from about 7 different types of green veggies. People at work were very rude about it when I posted a picture of the "gloop", but it's not too bad with a load of pepper sprinkled on, and I can make up a batch and freeze portions.

I'll keep an eye on this thread in case there are other suggestions I could use when I finally go back into the office.

Best of luck...I will have trouble catering for an 8 hour day, never mind 12 hours x
 
I take things like cheese, snacking cucumbers, crispy bacon strips, ready cooked chicken and salad.
 
Sausage rolls made with 'fat head' dough are handy if you want something more than just plain sausages - I don't mind them so have taken them or roasted chicken thighs, done on a rack for crispy skin, cubed cold meat from dinner the previous day, along with a chunk of cucumber a tomato sticks of celery, strips of sweet pepper etc. I used to make sugar free jellies for packed lunches, poured into 4 reusable plastic pots with lids. You could add a tablespoon of frozen berries, as they help set the jellies - I used to make them with less than one pint of water but these days I add extra gelatine and make one pint of water so as to reduce the sweetness.
Bread and sugary fruits are not going to be a good option as you are likely to feel really tired a couple of hours later as they spike your blood glucose.
 
I’m not sure if there are any packed-lunch-friendly ideas from T2s and low carbers on the ‘what did you eat yesterday’ thread - there are a few hundred pages to choose from!
