New to the forum - not great GP experience so far

I must admit I’m a carby person. I’d much rather eat potatoes, rice etc than chocolate etc. I find it difficult to not feel hungry. I remember the nurse saying about Metformin and it could suppress appetite but no such luck for me. I hate the texture of chickpeas, lentils, etc. What have you managed to subs for carbs to make you feel full (and for the full feeling to last)? The ideal would be no meds - I’m willing to diet/exercise. They just said when they put me on the tablets that it could be reviewed if I lost weight, but the side effects had put me off exercising regularly (not wanting to be on a walk and urgently needing to go) hence me going back to the docs but being put on something potentially worse
Celeriac instead of potato - does everything a potato does but tastes even better.
Chips, crisps, mashed with a small amount of cauliflower gives the texture and taste especially with butter and cream and salt and pepper and a sprinkle of dill or roast.

All the pictures show very low carb (keto) meals.
The first is a picture of home made crisps - just peel thin slices of celeriac and then shallow fry in small batches in olive oil and season to taste - I found cheese powder on Amazon so I can mix that with a little onion powder and have cheese and onion crisps now!! Celeriac has about 4g of carbs per 100g so this makes celeriac crisps very doable.

Second - is a roast chicken dinner with celeriac mash and stuffing made with home made keto bread that is around 1g carb per slice.

Third is a picture of home made KFC style chicken ( truly zero carb - the batter is made with 9g Pulsin Pea Protein and a single large egg and some salt and a weeny bit of baking powder - the protein powder is £6 from tesco and a little goes a very long way) and celeriac chips.

Fourth is a picture of sweet and sour chicken balls - made with the same batter. I buy cooked frozen chicken slices from tesco and coat them without thawing and then shallow fry them and by the time the batter is properly crispy they are nice and hot but not overcooked. I served with a mix of beansprouts and konjac noodles and other low carb veggies and the sweet and sour is made with Heinz Tomato Ketchup No Added Sugar & Salt 400Ml mixed with toasted sesame oil and a bit of tabasco sauce because I like a bit of a punch.

Just an idea of what can be achieved quite easily once you get the hang of the new ingredients.

I would recommend getting to grips with a keto bread recipe because once you have bread you can eat you open up a lot of easy meals. I make a loaf and slice it and freeze the slices so I can have cheese on toast when I fancy it without having a whole loaf sitting around. I can have stuffing or one of my favourites - melba toast with mushroom pate.

I don't miss carbs one bit because I have all the the carby favourites but made from zero - low carb ingredients.


Think of it as a culinary adventure - you have a lot of great discoveries ahead of you.
