New on here but not new to type 2 diabetes

Hi I have just seen the advert for Groovy Keto cake mix and cannot believe the prices they are charging. I myself am not a diabetic it i my husband who is type 2 and has been for many years. This happened not due to being overweight or eating too much sweet things but due to having a heart bi- pass 24 years ago. He became diabetic not long after. No I have been looking at the Groovy cake mixes and they are not much different to what I bake myself. I tend to look at "normal" recopies and change them to diabetic friendly cakes. I change the flour to Almond Flour and the sugar to Sweetener. I use whichever I can get hold of when I am shopping as they are more or less the same. I used to use baking powder but it never seemed to work. I read an article that said increase the eggs by 50% and omit the baking powder. Yes it does work. Hubby loves his buns and I even bake them in the air fryer. Easy and much cheaper than all these mixes you can buy online plus you know exactly what is in it. Hope this of some help to anyone wanting to make keto buns
 
I bought a big mixer to do baking with low carb ingredients - as it works better with largish amounts I make three or four lots of whatever the recipe is for and then freeze the results after cooking.
Having worked in the food industry myself I know the pressure the technicians work under to make things as cheaply as possible whilst ensuring they have a good long shelf life. I keep my ingredients in the freezer to extend their useful lifespan and buy in bulk.
