Welcome to the forum.
Carbohydrates are very easily turned into glucose by our body for fuel.
Those of us with diabetes have problems dealing with that glucose so it builds up in our system .
Carbohydrates are in most foods but some have far more than others.
Sugar is just a carbohydrate and in the uk it’s already included in the carbohydrate content.
We all become avid nutrition label readers on food. You can safely ignore the traffic light system on the front of packs, tins etc the carb content is on the label usually on the back .
We usually have no problems with protein or good fats.
Just to give you a few ideas to get you started
If you eat meat , it’s fine , as are high meat content sausages and burgers, eggs cooked anyway you like , cheese, veg that grows above ground , root veg tends to be more carby but some of us are ok with them , many of us have to be careful with fruit berries are often tolerated better (grapes are not berries , we call them little sugar bombs) , some nuts are low carb , mushrooms , diet drinks
Be careful with sugar free sweets, one or two to many can have an unfortunate laxative effect

This one explains how we test to see how the various carbohydrates affects us as we’re all different in this respect.

If you would like to test and if as most likely your gp practice refuses to prescribe you a glucose meter and test strips many here self fund this glucose meter as it’s test strips are the cheapest that we know of, around £8 for a pot of 50 , other brands are £15 +
