Chicken and broccoli crumble
Ingredients for four
2 good sized chicken breasts cut into bite sized chunks
1lb broccoli separated into florets
1 small onion, finely chopped
6oz grated strong Cheddar
4oz grated gruyere
4oz fine (pinhead) oatmeal
2 tblspns olive (or vegetable oil)
.25 tsp English mustard
1 heaped teaspoon cornflour
.5 pint of milk
Salt & pepper to taste
Heat the oil in a pan and soften the onion then add the chicken and brown thoroughly. Place the chicken and broccoli in an oven proof dish and set aside while you make the sauce. In a teacup stir the cornflour and mustard into a little milk, place the mixture in a saucepan and stir in the rest of the milk carefully so as to avoid lumps. Add the Cheddar and some salt & pepper, stir thoroughly till melted then pour over the chicken and broccoli. Pre-heat the oven to 180 (can't remember the gas mark, I think it's 3). In a bowl, mix the oatmeal and gruyere thoroughly (you could use more Cheddar or maybe peccarino instead). Sprinkle evenly over the top of the casserole and place in the oven till the top is crisply browned, depending on your oven this could be 20-30 minutes. I sometimes sprinkle some cayenne over the top as well.
If you don't like mustard, try a little grated nutmeg instead, they both bring out the flavour of the cheese.
