I had a go at making brown rice risotto tonight.

I cooked it for about half an hour, thinking "that should be plenty"...

it was rather crunchy still! (online recipes say 45 mins to an hour!)

texture was quite nice though!
 
Ordinary risotto takes about 20-30 minutes, haven't tried brown rice risotto but when you do risotto you should add the stock a little at a time until it stops being absorbed and the rice starts giving off it's starch to form a creamy consistency, I've never done it by timing it, just by look, feel and tasting and hope it's 30 minutes with Arborio or Carneroli rice.
