Has any one got ne ideas for quick and easy lunch for me. all i seem to have is a salad sandwich. getting bored of them now:(
 
I have soup, i sometimes make my own and heat it up in the microwave at work or i use cup of soups (my fave at the moment are the Ainsley Harriot ones) and i have a couple of crispbreads with it or a slice of burgen or rye bread, I also sometimes put a few croutons (about 6g, not many at all) and i think that is always a nice addition to soup, i buy the baked not fried ones.
 
Don't forget, most meats are low carb and therefore don't affect too your blood sugar too much. White meats and fish tend to be lower in saturated fats too.

Generally we have some sliced chicken in the house (either packaged or sliced from a joint done in the oven the night before).

Recently I discovered bags of frozen smoked haddock pieces, which is a few minutes in the microwave (but shinks a bit) or about 30 minutes in the oven. It's quite nice and ticks the "good omega oils" tick box as well.

Frozen prawns are good too, if you don't have time to dethaw them for a day in the fridge my sisters technique is to take them directly from the freezer, put them in a sieve and tip a kettle of boiled water over them (followed by some cold water so you don't cook them and turn them rubbery).
