Near-zero carb pizza experiment

On one of the foodie programmes this week, there was a dish featuring a flattened chicken breast. Basically you put the chicken between sheets of greaseproof paper and bash it until it's completely flat and then fry for a couple of minutes each side. That set the imagination going (dangerous, I know). It looked very much like an individual sized pizza base, so tonight I'm going to try it, topped with my squashed roasted mediterranean veg sauce and some low-fat mozzarella. Wish me luck!
 
Its not a pizza its chicken with cheese on top:D nevertheless sounds very nice.
 
That sounds geat, i may try it, but not sure its can be classed as pizza.
I do it with pork at the mo, dip it in flour, then egg and then breadcrumbs, now not as low in carbs as one would like, and the old cal counting goes out the window, but have a diet coke with it to even things out:D
 
Went with your idea tonight (but not the pizza thing) but it did inspire me, so i thwacked the fillets flat, put leeks, pepper's and toms on it, then rolled it up (like a swis roll) wrapped in foil and baked for 30 mins, and yum yum, the family enjoyed it, and now its in the Mrs recipe book, so cheers for that one:D
 
I got home a lot later than planned, so raided the cupboard instead of cooking properly. Will post my opinion of the results tomorrow. Megga, I'm glad you enjoyed your din-dins. Might have a go at that one myself.

Toby, you're right... it ain't pizza. It was very nice though. Surprisingly filling as well. It looked rather small on the plate, but has filled me up nicely.
