Ingredients
1 pint or orange or mandarin juice
1 pint elderflower press? (Belvoir Cordials do a really good on), I find Bottlegreen too sweet)
Splenda or other sweetener to taste (I used 3 heaped tablespoons which I hope will be enough)
1/2 a tsp each Nutmeg, cinnamon, mace and allspice, add a couple of cloves too if you like them, finely ground. I use a special coffee mill for this (not the one I use for the coffee)
A couple of Mandarins carefully peeled and roughly chopped (make sure you get all the white stuff off).
Heat the sweetener and spices in the orange juice till the sweetener has all melted then allow the mix to cool. Stir in the elderflower and place in an airtight container in the freezer. Take out the mix three or four times while it's freezing and stir well to break up the ice crystals, so you get snow rather than ice.
When it comes time to serve add the chopped fruit.
