Type 1
This is a basic recipe which I often adapt with different . Unlike some cakes, the texture seems to be unaffected by reducing the sugar, so you can make healthier variations.

275g plain flour
1tbsp baking powder
1/2 tsp salt
75g sugar (I often use about 60g and they still taste good) Or use half splenda half sugar, or try honey - add enough until the batter tastes nice!
2 eggs, lightly beaten
225 ml buttermilk/yoghurt/milk
50g melted butter/margarine

Preheat the oven to Gas 6/200 C. Put 12 paper muffin cases in deep muffin tins. Mix the dry ingredients together

Beat together the eggs, butter and milk/yoghurt. Pour into a well in the dry ingredients.

Stir gently to form a batter - don't overmix as it should remain lumpy.

Spoon into the prepared tins, bake for 20-25 mins until risen and golden

Variations:
Orange muffins - add the zest and juice of an orange to the liquid ingredients. Reduce the sugar slightly to take account of the sugar in the juice.

Berry: add 175g fresh or frozen berries to the dry mixture, e.g. blueberries, raspberries

Raisin bran: Replace half the flour with bran. Reduce sugar to 50g and add 75g raisins to the dry ingredients

Banana apricot: Use only 40g sugar and add 50g chopped apricots to dry ingredients. Mash 2 ripe bananas and make up to 300ml with the milk or yoghurt. Add 2tbsp clear honey, the 2 beaten eggs and the melted butter and mix as above.

I've also made them with grated carrot and apple - sorry I can't remember the exact quantities, but I tend to just throw things in until it tastes nice!

They freeze well, and make a nice change for breakfast sometimes.
 
Thanks Pigeon - I've made them with courgettes and beetroot too, back in my pre-D days, will give your recipes a go! :D

i may be newbie only joined an hour ago, but i wanted to say thanks for this recipie, its great, and the variations sound yummy!!! i have tried making diabetic cakes but gave up as they looked more like pastry an tasted awful, so i gave up. so when i read your comment about the texture being good, that made me one happy camper! time to experiment, before i start my vlcd diet next week hehehe!!!!
