muffin disaster

I have to say my attempt to make muffins with blueberries today following a so called healthy diabetic recipie was an utter disaster, not rising and looking more like cow pats! will have to find a better recipie:D.

I also didnt realise how nackered id be after mixing! 😱

The recipie which was on line somewhere i will look it up, said wholemeal flour. I think it was missing the word self raising on reflection! i will try again at some point 🙂 before i condem the recipie fully!!!!!!
 
I actually quite like muffins. 🙂

Also, I believe that they're not too bad for me either (but have probably got that wrong - no doubt someone will put me right!).

So, if you can find a recipe that works, I might be interested.

I posted my tried and tested muffin recipe in the recipe section a while ago, you could try that and CarolynSurry's too!
