I absolutely love minted lamb steaks, but the marinade they use at the butcher's is full of sugar and the meat is fatty. Here's my version:
- Lamb leg steak (cut off ALL visible fat and feed it to the birds)
- 1 clove of garlic, finely grated
- 1 tablespoon of balsamic vinegar
- 1 generous teaspoon of granulated artificial sweetener
- 1 teaspoon of dried mint
- Salt & pepper
Mix the marinade ingredients together, spread it over both sides of the lamb steak, cover and leave in the fridge for a couple of hours (preferably overnight). Flash fry, and tuck in!
