Roughly chop some tomatoes (plum, cherry or whatever is in the fridge), peppers, courgette, onion and any other veggies you fancy into a mixing bowl. Throw in a few cloves of garlic, spray the lot with Fry-Light (or olive oil if you can spare the calories). Spread on a baking tray and roast in a hot oven until soft and a bit blackened. Leave to cool a bit then put the lot in the food processor with some passata, italian herbs, chilli flakes, salt and pepper. Pulse until blended but still a bit chunky.
I had mine stirred into a small portion of pasta with half a gammon steak, but if you make it nice and thick (limit the quantity of passata) it would also go well as a "pizza" topping on huge flat mushrooms - just add some grated cheese.
