Mediterranean meatballs

Invented these last night. Quantities were just made up so just add what amounts you like

Ingredients
Olives (any type)
Chorizo
Onion
Garlic
Mixed herbs
Feta cheese
Beef mince

Put olives, chorizo & onion in a blender & blitz. Add to beef mince along with minced garlic & herbs & mix together with hands. Take chunks off & roll into balls, then flatten. Chop feta cheese into small squares and place in centre of flatten meatballs, wrap mince around feta & roll into balls. 250g of mince should make 8 meatballs. Cook in oven at around 200c for 20-25 mins.

I served them with ratatouille, which consists of aubergine, courgette, celery, onion, garlic & chopped tomatoes.
 
Mark every time I read your posts I end up sitting here licking my chops. I find it extremely difficult however with olives in your recipe. Nature created them to give people like me something to strongly dislike. Olives and that God awful hummus, mayonnaise and salad cream, if ever there was a diet from the depths of hell those 4 ingredients would feature. Thee rest of your recipe however gets a whopping big thumbs up :D
 
Im not a big fan of olives either. Could never eat one on its own. But love them in cooking. Of course, you can omit the olives in this recipe but you will need to add a bit of egg for binding as the mixture is dryer without the olives.

Woah, did you just diss houmous?! It's literally THE best dip on the planet. If we're talking about gross foods, can someone explain why everyone seems to like tomato ketchup? Ewww

Im with you on that one Rosie. Tomato ketchup is just wrong!!! Love houmous.

Thanks once again Marky. These are certainly going on the menu. A nice thick tomato sauce and voila...LCFF heaven 🙂
 
Sorry but you are both wrong. The one most grossest thing in the world is brown sauce. Oh, and beetroot. Disgusting!

Did you like beer the first time one of your uncles let you have a sip at a family party? No! It tasted awful. However, you didn't let that stop you. Olives, hummus, mayo et al are similarly 'acquired' tastes for the more refined palate. Oh...hang on...I've just remember who you are. I'd better leave you to get on with your jam butty from the mine at Knotty Ash. :D

Apparently they love their beetroot in the antipodes.... Luckily I was forewarned before I went to New Zealand last spring...
 
I make a similar version of these but haven't included olives. I sometimes stuff them with mozzarella cheese too and serve with tomato and basil sauce. They're excellent in a lasagne for a change 🙂

I'm with you on beetroot Mark - as a kid I used to hate the way it stained all the other stuff on the plate, and was never keen on the flavour. However, it does make a fantastic ingredient in chocolate cake! 🙂
 
I'm rather late to comment on this particular recipe, but try it with minced pork for that true Mediterranean taste.

And I love beetroot, but don't forget it contains pure sucrose.
