Well, I do! They seem to come out fine. (They can dry up a bit if you leave them in the freezer too long and whatever you wrapped them in comes undone, that's happened to me!)

We took to roasting a whole ham, then slicing it and freezing them in small packs.

Not sure whether it would be more than buying slices. I got days of meals out of it.

I guess it might also depend on the water content; as the water in the Ham will tend to crystallize when frozen.
