Marrow provincial I did this one at college I have no idea if this is a regional recipe or just one we did.
Take 1 medium size marrow- peel seed and chop into cubes
2 large onion
1 clove of garlic
1 soup spoon Italian herbs
1 coffee spoon (1/2 tea spoonish) Salt
pinch Pepper
1 clove of Garlic
1 coffee spoon Celery seed (be careful with this experiment for your taste)
Tomatoes or a can of chopped tomatoes
Fry onion until translucent - add all herbs / seasoning fry - for a minute ?
Add the marrow cook for 5 minutes
Add the tomatoes
Cook until the marrow is soft,
I like this with Gammon and cous cous.
