Managing curry and blood sugar

Wondering if anyone can offer advice.

I had a curry the other night. I am carb counting and very carefully counted my portions allowing for a tablespoon of rice, half a Paratha and a small amount of naan. I split my insulin dose, giving some before the meal and some just after I finished.

As I am pregnant I tested an hour after eating and was 4.9. I then tested 5 hours after eating (just before bed) and it had shot up to over 11. I got a bit stressed and gave myself a correction of 1 unit but even half an hour later it was still high.

Does anyone else get this delayed reaction to carbs and how is best to manage it?

I am on a Medtronic pump which has a split dose feature. You can alter time & % of insulin. I use that feature a lot with certain foods like pizza. How about giving two injections 🙂
