Hi All
I'm thinking of buying a bread maker to make my own low carb bread. Does anyone else use one and if so any ideas and or recipes. Thanks

I found that the breadmaker was too aggressive and the loaf collapsed in the middle before the baking began.
These days I just knead by hand and let the dough rise a first time in a fairly normal way, then I roll it out into a disc (I have an extra long rolling pin) fold it into three one way and three the other rather like for pastry, on a lightly floured board, roll and repeat once, then roll out so it is a long rectangle the width of the baking tin then roll it up and plop it into the tin - all done quite lightly so as not to make it give up and go into a slump.

I've never managed to make a loaf of low carb bread without it looking like a Yorkshire pudding, so I have to agree there!
If you use it on the Dough setting only, then form the dough into rolls, and prove them in a warm place, they're pretty good.

Not sure but think it was a Panasonic bread maker I saw which actually had a low carb bread function on it. My machine died a death so went looking for another which makes gluten free bread hence the memory jog 🙂
 
My breadmaker is an elderly Panasonic that a friend gave me when he got a newer one. I'm wondering if that's why my low carb loaf was such a sad excuse! Rolls made from breadmaker dough give a much more reliable result.

I gave the bread maker to my daughter as they like home made pizza, but anyone who has trouble with kneading the dough could use the mechanical power of the device for mixing and the first rising, then switch off and do the last proving as rolls or in a tin before baking, so that the rather delicate dough does not collapse.
