Lunch ideas and not eating enough.

Hi any lunch ideas? I have tuna on baked potato ( small), ham and cheese two egg omelette or soup .Getting bored with this so sometimes have a sandwich from co- op fairly low carbs 32g.
I'm also struggling with not eating enough calories, my fitness pal app is alway telling me off!! I'm on around 50-70 g carbs at the moment as I'm on steroids for a chest infection and boy does it send the numbers high!! What can I eat when I'm hungry ? ,trying to avoid more than one Jaffa cake but it's so tempting!!
 
I went to a Tesco express that had wraps made from omelettes. They were in the sandwich section. Really nice.
 
In winter I like toasted wraps made from low carb tortillas...... Fortunately here (in the US) most supermarkets sell the ones which are 3g net carbs

I make myself truly crustless little quiches in muffin cases - just eggs, cream/milk, bacon, onion and whatever else low carb I fancy eg courgette, asparagus... I find I can eat these with a clear conscience and no insulin:D

No. I wrote really mice instead of really nice.🙂 Rats is funnier though.:D
 
i am currently into little tins of mackral in tomato sauce roughly 4g carbs and tasty too have a lidl protein roll to mop the sauce up
 
Just made cheeseburger pie and some tomato and pepper soup. Smells are going round my heart.
 
I love a lunch made from a blob of mozzarella, sliced, with a beef tomato, sliced and sprinkled with sea salt and black pepper. Oh, and nice big juicy olives.

Yum.

Sometimes I have smoked mackerel instead of the mozzarella.

And in the cooler months, I make up a big pot of soup (stock, whatever veg I have on hand, and nicely caramelised onions). Then I can have it on successive days. No need to add potato or starchy thickeners. For variety can be blended, spiced with curry paste, or served with a dash of cream or a sprinkle of grated cheese.

OF course, soup kind of cries out for bread with it, but now I have discovered low carb muffins, I make up a savoury one of that instead (microwave, 90 secs) and love it. The muffin won't dunk, but it is GORGEOUS sliced and toasted.
 
At this time of year I eat alot of homemade mixed veg soup, which I freeze in portions, then defrost as needed, I then either have as is, or add chicken, bacon lardons, or corned beef!

I prefer it in olive oil.......0 carbs lovely on a salad with the low carb bread of your choice
