having just eaten a most uninspiring salad for lunch, I am after some ideas for low carb lunches that I can make and take to work with me. Some days my salads are good but today's one was just so uninspiring but maybe it is matching my mood. Some days I take left overs from the night before with me, if we have any.

But need a few ideas as it is salad most days for me. Only have a microwave shared with about 20 other people available so really needs to be something I can eat cold.
 
Frittata is good for slicing up and taking in a tuck box, a deep pan omelette that's low carb you can put whatever you fancy in whilst cooking, different cheeses, mushrooms, peppers, spinach a multitude of other vegetables and or bacon/meats. It keeps well in the fridge isn't messy to carry and eat and is filling.

Eggs, cheese, ham etc.

I just had a salad lunch with 2 cheese melts on the side covered in Hummus, it went down a treat,
Carrs cheese melts 2.4g carbs per biscuit, hummus depends how thick you spread it I guess, its about 7g carbs for 50g
I like this as a snack too. 😛
 
If you like olives, a tub of mixed olives with feta. I got a very nice Greek Salad from Lidl yesterday with olives and Feta and a mint dressing for the spinach and rocket leaves which really hit the spot. I would not have thought of a mint dressing. I added a little balsamic just because I love it. Also a mozzarella, tomato and basil salad with balsamic works well for me.
I've had a Nature Valley salted caramel Protein bar at (10g carbs per bar) and a small banana today. You could add in a chunk of cheese or some celery sticks and a sour cream onion and chive dip.
