Lowish carb chocolate muffins.

I bake these using a low carb brownie recipe that uses ground almonds in place of flour. Instead of baking it in a tray and cutting it up I put it into bun cases and top them with 70% cocoa chocolate and a walnut. The lack of gluten means that they are a bit crumbly when you eat them so you need to use a plate. Each muffin contains 9.5g carbs. The chocolate and walnut topping adds an extra 2.5g carbs making the muffins 12g each. I posted the recipe in an old post but I can't find it now so I can't post a link. If anyone is interested, let me know in the comments and I'll re-post it here.

Ingredients.

95g Ground Almonds. 6.9% 6.6g
25g Cocoa Powder. 8.7% 2.2g
5g Baking Powder. 88.0% 4.4g
1/4 Teaspoon Salt. 0.0% 0.0g
65g Butter. 0.6% 0.4g
50ml Water. 0.0% 0.0g
2 Eggs. 0.0% 0.0g
100g Brown Sugar. 100% 100.0g
1 Teaspoon / 10g
Vanilla Extract. 0.0% 0.0g

Method.
Soften the butter. Put all the ingredients into a mixing bowl and mix thoroughly. Divide the mixture between twelve bun cases. Bake for 20 minutes at 180 degrees Celsius. Leave to cool. Melt 100 grams of chocolate by placing it in a Pyrex jug placed in a pan of hot water. Pour a small amount of chocolate onto each muffin and place a walnut on the top.

The total carb content adds up to 114g which, divided by twelve gives you 9.5g. The chocolate and walnuts add around 2.5g giving a total of 12g per muffin.

Now that I've given out the recipe, I'm getting a bit impatient while waiting for someone to post a picture of their own chocolate muffins. Maybe they were so delicious that they got eaten before there was a chance to photograph them.

Most of the carbs seem to come from the sugar -- easily replaced with sweetener.
It might mean increasing the rest of the ingredients in order to get the same number of buns.
If the other ingredients are increased to 150% of the original recipe you could get get 18 buns and each one would be a couple of carbs.
