I bake these using a low carb brownie recipe that uses ground almonds in place of flour. Instead of baking it in a tray and cutting it up I put it into bun cases and top them with 70% cocoa chocolate and a walnut. The lack of gluten means that they are a bit crumbly when you eat them so you need to use a plate. Each muffin contains 9.5g carbs. The chocolate and walnut topping adds an extra 2.5g carbs making the muffins 12g each. I posted the recipe in an old post but I can't find it now so I can't post a link.
