low carb potato

Has anyone heard of this low carb potato I have read it somewhere I think it is calles vilvadi or similar? Or is there any other potato substitute apart from sweet potato or cauliflower?

Only just come across this - I did NOT know that about Vivaldi potatoes!! I love them, they have a really nice flavour, but cos they're a little dearer we only get them when they're on special offer in Sainsbury's! Now I know this, I may be getting them more often and hang the expense!!

I was reading elsewhere on the forum that Vivaldi potatoes, which are apparently lower carb, are hard to come by in the UK. Unfortunately I can't find the posts now, but Google suggests that the Vivaldi seed potatoes are now quite widely available. As a veg-grower myself (and a pre-diabetic who likes spuds!) I might give them a try this year. 🙂

Only 2g lower per baked 100g according to nutracheck, so not really significantly lower

Butternut squash is lower carb than potato.
I have grown 2 varieties of squash, seeds from Thompson and Morgan called baked potato and mashed potato which they claim to be lower carb than potato but with the texture of potato.

You need to compare like for like.
raw,
mashed,
fried......

Potato isn't different to many other "substitutes", at times it even beats them.

Cooked against raw butternut squash for example, depending on which you use.
Mashed -
22g in squash
15g in potato

But unfortunately "potato is bad" seems to be chanted because it was on the Eatwell Plate that was demonised.
 
Hmmm... if there's not much difference between varieties I'm not sure I'll bother. I've cut down on the amount of potato I eat, and will see how things go. We grow butternut squash which we enjoy roasted on its own or with red onion and spices and made into soup. We've also found that using swede and potato to make mash is perfectly acceptable. But there's still something about a steaming hot baked spud that tugs at the heartstrings.

Anything baked will artificially push the carb content up.

If you look at the carbs in a spud, 15g per 100g
Baked it goes up to over 20g per 100g.

That is because the oven has baked the water out, and the actual baked potato is now only 75g.

The carbs are still exactly the same for the spud that went in.

With butter on, the fat will slow down the digestion, so it may well be a happy option for you.
